Hi, I’m Gillian Simpler.

I am a culinary school graduate and food content creator in New York City.

PASSION FOR FOOD

I LOVE all things food! From baking and cooking in my own kitchen, to enjoying an incredible meal at a restaurant, to engaging in exciting food content on social media, and so much more! I started Simpler Eats during college as a place where I could share my love of the culinary world with others. After college, I completed the Health-Supportive Culinary Arts program at ICE, where I gained an education in plant-forward, health-focused, and real food preparations. I’m currently attending the Pastry and Baking Arts program at ICE to take my baking skills to another level! I enjoy making simple recipes, sometimes with funky and new flavors, that highlight and celebrate the ingredients they include. I find so much meaning in the food that I eat and create, and I hope that I can help you all feel the same passion for food that I do.

LIFELONG CELIAC

I was diagnosed with Celiac Disease in 2002 when I was only two years old, and it’s impossible to talk about my love of food without that defining detail. Growing up, I was extremely restrictive with my diet and in a lot of ways food felt like the enemy. My mom and I started baking together so I could have gluten-free treats that were very difficult to find at the time. Long story short, I fell in love with baking and being able to create things that were otherwise unavailable to me. Since I was diagnosed, there has been so much progress with gluten-free products being available at every grocery store, and it’s no longer shocking to me when a restaurant has gluten-free bread. But, there is still so much room to grow and I can’t wait to bring more gluten-free goodies to you all!
