Gluten-Free Blood Orange Upside-Down Cake
I LOVE citrus, so much that I would take lemons as one of my five ingredients to a desert island. When it comes to baking, it’s one of my go to ingredients, and every year I wait for blood orange season to come around. These oranges are so stunning and deserve to be the focal point of any baked good. This cake is simple, easy, and lets the blood oranges do all the work so it comes out looking effortlessly beautiful.
Gluten-Free Blood Orange Upside-Down CakE
Yield: 1 9 inch cake
Ingredients
3 blood oranges
2 tbsp turbinado sugar (25g)
3/4 cup granulated sugar (160g)
Zest of two navel oranges (20g)
3 eggs (150g)
Juice of two navel oranges (160g)
2/3 cup olive oil (130g)
1 1/2 cups GF all purpose flour (260g)
2 tsp baking powder
1/4 tsp salt
confectioners sugar for topping
Steps
Preheat the oven to 350°F, prepare an 8-inch cake pan with a parchment round.
Start by preparing the blood orange slices. Using a chef’s knife, cut around the oranges to remove the rind, leaving only a very thin layer of pith. Then cut into 1/4 inch slices.
Sprinkle the turbinado sugar over the base of the cake pan and arrange the orange slices, keeping in mind the design will be flipped when the cake is turned out.
Next, make the olive oil cake batter. Combine the granulated sugar and orange zest. Using your fingers, rub the zest into the sugar until it is fragrant and lightly tinted orange.
Whisk together the sugar mixture and eggs until frothy. Add the orange juice and olive oil and mix to combine.
In another bowl, mix the flour, baking powder, and salt. Fold the dry ingredients into the wet mixture until just combined.
Using a cookie scoop or spoon, carefully layer the batter on top of arranged oranges in the cake pan.
Bake at 350°F for about 35 min, until a toothpick comes out clean.
Allow the cake to cool slightly, and if the cake is domed trim some of the bottom before flipping over.
Optional: Brush the cake with an orange simple syrup. Add the juice and zest of another blood orange to a small pan with granulated sugar and heat until the sugar is dissolved.
