Gluten-Free Candied Ginger Blondies

When candied ginger and blondies come together, it’s a match made in heaven. The bright ginger is the perfect contrast to a sweet, buttery blondie and adds even more to that chewy texture. If you’re hesitant about this one, I swear every person I give these to is obsessed!

Gluten-Free Candied Ginger Blondies

Yield: 16 blondies (8x8in pan)

Ingredients

  • 150g unsalted butter, melted

  • 150g light brown sugar

  • 50g granulated sugar

  • 1 large egg (50 g)

  • 1 tsp vanilla extract

  • 160g gluten-free all-purpose flour

  • ½ tsp baking powder

  • ½ tsp salt

  • 80g candied ginger, chopped small

  • 50g dark chocolate chips

Steps

  1. Preheat the oven to 350°F. Prepare an 8” square baking dish with cooking spray and line with parchment.

  2. Combine the melted butter with both sugars in a mixing bowl and whisk until fully incorporated. Add the egg and vanilla extract, mixing after each.

  3. Combine the flour, baking powder, and salt in a separate bowl then add to your wet ingredients. Beat until the batter is fully mixed.

  4. Sprinkle the candied ginger pieces into the batter a little bit at a time, mixing as you go to avoid the ginger pieces sticking together. Add the chocolate chips and mix well.

  5. Pour your batter into the prepared dish and bake for about 30 mins, until the edges start to brown and the center looks mostly set!

  6. Allow your blondies to cool before cutting and enjoy!
