Easy Gluten-Free Banana BreaD
After searching with no success for the perfect easy gluten-free banana bread recipe, I decided to make one myself! I love this recipe because it uses basic pantry staples so whenever you have ripe bananas, you’re good to go! I use olive oil for a healthier fat that keeps the bread moist, and three ripe bananas add just the right amount of natural sweetness so you only need a little sugar. Confession: I often make this all in one bowl for a quick, easy banana bread that’s ready in no time!
Ingredients:
Wet:
3 ripe bananas (300g)
2 eggs (100g)
1/4 cup olive oil (53g)
1 tsp vanilla extract
Dry:
1 1/2 cups GF all purpose flour (250g)
1/2 cup sugar (110g)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 cup cacao nibs for topping
Steps:
Preheat the oven to 350°F.
In a large mixing bowl, mash up your bananas (I like to keep mine somewhat chunky for nice pieces of banana in the bread). Add the rest of the wet ingredients and mix till combined.
Mix together all the dry ingredients in a separate bowl.
Add the dry mixture to the wet and combine well.
Pour mixture into prepared bread pan.
Sprinkle cacao nibs evenly on top and bake for 45-60 minutes.*
Cool and enjoy!
(*I've made this recipe in a variety of ovens at 350°F and noticed that the bake time can differ greatly based on the oven I use. I'm not sure why, but if you are making this for the first time check it every 5-10 minutes after its been in for 30 mins to make sure it doesn't overbake)
